Blueberry Buckle Recipe

Since July is the month when blueberries are in season, I thought I would share another recipe here that I enjoy - Blueberry Buckle. 

What is Blueberry Buckle? 

This is basically like a coffee cake. In our home, this is a treat. We usually only make this once a year, at best. 

I have a brother who loves blueberries. He likes them in almost anything - blueberry smoothies, blueberry pancakes, blueberry muffins, and yes, blueberry buckle. 

And of all things, he was born during the month of July when blueberries are in season. 

Naturally, I like to make this for him as a birthday treat. He enjoys it along with others in my home. 

Blueberry Buckle 

I made this the night before my brother’s birthday last year as well as this year. I stayed up late to make it and pull it out of the oven so it was ready as a surprise for him the next morning. (the time on our oven shows how incredibly late it was!) 

My mom’s tea towel hanging on our oven door matched the blueberry theme well. 

 
I received this recipe from a friend, and after making it, decided it was definitely a keeper. 

Enjoy! 

Blueberry Buckle 

Mix: 
3/4 cup sugar
1/4 cup soft butter
1 egg 

Stir in: 
1/2 cup milk (regular or dairy free) 

Add: 
2 cups flour
2 tsp. baking powder 
1/2 tsp. salt
2 cups blueberries (fresh or frozen) 

Spread the batter in a greased 9 x 13 inch pan. 

Sprinkle the top with crumbs: 

1/2 cup sugar 
1 tsp. cinnamon
1/3 cup flour 
1/4 cup soft butter 

(Mix this in a small bowl until you get a crumbly texture. Sometimes, I mix this with clean hands.) 

Bake at 350 degrees F for 45-50 minutes. 

P.S. This is delicious with coffee.
